Ingredients

1 cup cashews (soaked 1 hour)
5 tbsp fresh lemon juice
3 tbsp avocado oil
1 tbsp spring water
2 tbsp tahini
6 tbsp nutritional yeast
2 tbsp Lion’s Milk™
¾ tsp salt
½ tsp paprika
¼ tsp cayenne pepper

Garnish:

Green onion (finely sliced)
Sesame seeds

This creamy, tangy vegan cheese ball is rich, savory, and surprisingly simple to make — with the added magic of lion’s mane mushroom and warming spices for a nourishing twist on a classic party favorite. Soak the cashews.
Place cashews in a bowl and cover with boiling water. Let soak for 1 hour, then drain.

Blend the base.
Add all ingredients (except garnish) to a food processor and blend until smooth and creamy.

Shape and chill.
Transfer the mixture onto cheesecloth or parchment, shape it into a ball, and wrap it tightly before freezing for 1 hour to firm up.

Coat and finish.
Roll the cheese ball in sesame seeds, then in finely sliced green onions.

Set and serve.
Chill in the fridge for 30 minutes or until ready to serve.
